The ingredients you use in cooking have a significant effect on how your recipes turn out, and historic recipes are no different. The problem is, these recipes were written for the ingredients of the time, and those ingredients may have changed very significantly over time. Sizes of vegetables have changed (generally larger). The flavors and textures of meats have changed (generally more bland and more tender). And the methods by which ingredients are processed changed, which results in the materials being processed changing, i.e. stone milling vs. roller milling.
